This Candy is Dandy
No Cooking. No Fooling!
Almost everyone loves candy. But most of it is BAD for your health! I find that situation unacceptable. It is natural for many people to crave sweet foods, so here is an example of how to work with that part of our nature rather than fight against it.
This is a no-cook candy that can be enjoyed by kids and adults alike. You’ll love it for its great taste — and also for its healthful qualities!
Chef Deb’s Date-Coconut Candy
1 cup date paste*
1 cup almond butter (or other)
1 cup unsweetened coconut flakes
1/2 cup finely chopped almonds
Additional coconut (for rolling)
Mix all except "additional coconut" in processor or blender.
Form into 3" long rolls, about 1/3" diameter.
Roll in coconut.
Put on plate, and chill in fridge.
When cool, wrap in wax paper.
Keep refrigerated.
*Soak seedless dates in hot water for 1 hour.
Grind in processor to a paste.
Store any unused portion in jar in fridge.
NOTE: Date paste is available in some health food stores and also in some Middle-Eastern grocery stores.
VARIATIONS
- Use peanut butter or other nut butter in place of almond butter.
- Use other chopped nuts in place of almonds.
- Use raisin paste instead of date paste (follow recipe for date paste, using raisins instead of dates).
