Substantial Soup in Quick Time

After a long day out and about, we got home around dinnertime last evening tired and hungry. It had been a busy day, and I had nothing planned or prepared ahead of time for the evening meal. I took a quick look around the kitchen and saw a nice couple of sweet potatoes that had been sitting there for several days. That was the inspiration I needed.

Speaking of easy recipes for the tired cook, this is a good one. Everyone loved this hearty and delicious soup. It took 15 minutes to prepare. Very fast, very easy, and very nutritious.

Chili Bean Soup

1 can chili (meat or vegetarian)
1 can kidney beans, drained and rinsed
1 can pinto beans or white beans, drained and rinsed
1 can black olives, drained
1 can corn, drained
1 tomato, chopped
1 tsp Mexican chili powder
1 tsp ground cumin
1/2 tsp cayenne (or to taste)
Salt and pepper, to taste
2 sweet potatoes, boiled and mashed
Cinnamon

Into a saucepan, put chili, beans, olives, corn, tomato, chili powder, and cumin. Stir to mix.
Heat to boiling. Turn down to simmer. Simmer 10 minutes, stirring often.
Add salt, pepper, and cayenne to taste.
Serve in bowls, topped with a spoonful of mashed sweet potato and a sprinkling of cinnamon.
