Eat Like a King
Here is a recipe that makes a nice dish for lunch or supper. If you have some leftover cooked chicken on hand, you can put this together very quickly, but I suggest you eat it slowly and savor every bite. The recipe makes two servings. Share it with a friend, or put away the second serving for another day. For dessert, you could have coffee or tea and a sugar-free cookie.
Chicken a la King
2 chicken thighs, roasted, no skin, diced (or use white meat, if preferred)
2 cups mixed vegetables, steamed
1/2 bell pepper, finely diced
1/4 cup canned mushrooms, drained, diced
1 cup fat-free chicken gravy
2 English muffins, split and toasted
In a large bowl, put diced chicken, mixed vegetables, diced pepper, and diced mushrooms.
Mix gently to blend.
Add gravy, and mix gently to blend.
Heat over medium-low heat in a saucepan, stirring often, or microwave until hot.
Serve over lightly-toasted muffins.
2 servings.
Variation: Tofu a la King
Substitute flavored tofu, diced, for the chicken.
Flavored tofu is available at Asian markets and health food stores. You can also make your own flavored tofu.
